As the owner you are the data controller, and the terminal is configured so you can act like one. Consent is collected on the touchscreen with separate, unticked boxes for contact details, image rights and marketing use, in Italian, so bundled consent is not an issue under the Italian implementation of the GDPR. You decide which fields are captured and how long they are retained, and every record carries a cryptographically secured consent timestamp — the evidence a Garante enquiry or an internal audit will ask for.
